Ingredients:
- 1 lb chicken breast, diced
- 1 cup rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup frozen peas
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
In a large skillet, heat olive oil over medium heat
Add diced chicken breast and cook until browned
Add diced onion and minced garlic, cook until softened
Stir in rice, chicken broth, heavy cream, dried thyme, salt, and pepper
Bring to a simmer, then reduce heat to low, cover, and let cook for 20 minutes or until rice is tender
Stir in frozen peas and cook for an additional 5 minutes until heated through
