Ingredients:
- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 6 cups gluten-free chicken broth
- 2 cups cooked chicken, shredded
- 1 cup gluten-free noodles such as rice or quinoa noodles
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp chopped fresh parsley for garnish
Instructions:
In a large pot, heat olive oil over medium heat
Add chopped onion, carrots, celery, and minced garlic
Saut until vegetables are tender, about 5 minutes
Pour in gluten-free chicken broth and bring to a simmer
Add shredded chicken, gluten-free noodles, dried thyme, salt, and pepper
Cook until noodles are tender, about 10-12 minutes
Taste and adjust seasoning if needed
