Ingredients:
- 1 lb chicken breast, diced
- 2 tablespoons coconut oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons curry powder
- 1 can 14 oz coconut milk
- 1 cup chicken broth
- 1 red bell pepper, sliced
- 1 cup spinach leaves
- Salt and pepper to taste
Instructions:
Put coconut oil in a large pan and heat it over medium-low heat
It will take about 5 minutes of cooking after adding the diced chicken breast until it turns brown
To the pan, add the minced garlic, diced onion, and grated ginger
For about two minutes, saut until the food smells good
Add the curry powder to the chicken mixture and mix it in
Add the chicken broth and coconut milk
Bring it to a simmer, then stir it every now and then for 10 minutes
Slice the red bell pepper and add the spinach leaves to the pan
Add five more minutes of cooking and keep going until the vegetables are soft
Add pepper and salt to taste
Enjoy while hot!
