Ingredients:
- 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup soy sauce
- 2 tablespoons sriracha sauce
- 2 tablespoons honey
- 1 tablespoon vegetable oil
- 1 teaspoon minced garlic
- 1 teaspoon minced ginger
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 2 cups shredded green papaya
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 1/4 cup chopped peanuts
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
- 1 tablespoon brown sugar
- Salt and pepper to taste
- Bamboo skewers, soaked in water for 30 minutes
Instructions:
Put soy sauce, sriracha sauce, honey, vegetable oil, salt, cumin, paprika, and cayenne pepper in a bowl
Add the minced garlic and ginger
To make the marinade, mix it well
Put the chicken cubes in the fridge for at least 30 minutes or up to 4 hours after adding the marinade
Toss the chicken to coat it
Make the green papaya salad while the chicken is marinating
Shred green papaya and mix it with chopped peanuts, cilantro, mint, fish sauce, lime juice, brown sugar, salt, and pepper in a large bowl
Mix it up and set it aside
Warm up the grill over medium-high heat
Put the chicken cubes that have been marinated on skewers made of soaked bamboo
The chicken skewers should be cooked all the way through and have a little char on each side for 5 to 7 minutes
Put the green papaya salad next to the spicy chicken skewers
If you want, you can add more peanuts, cilantro, and mint as a garnish
