Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Red and blue gel food coloring
- 1/2 cup white chocolate chips
- 1/2 cup blue raspberry-flavored candy melts
- 1/2 cup strawberry-flavored candy melts
Instructions:
In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy
Add the egg and vanilla extract to the bowl and mix until well combined
In a separate bowl, whisk together the all-purpose flour, baking powder, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms
Divide the dough into three equal portions
Leave one portion plain, dye one portion with red gel food coloring, and the other with blue gel food coloring
Wrap each colored portion of dough in plastic wrap and refrigerate for at least 30 minutes
Preheat your oven to 350F 175C and line a baking sheet with parchment paper
Take a small amount of each colored dough and press them together to form a red-white-blue ball
Place the ball on the prepared baking sheet and gently flatten it with the palm of your hand
Repeat the process with the remaining dough portions, spacing the cookies about 2 inches apart
Bake the cookies in the preheated oven for 10-12 minutes or until the edges are lightly golden
Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
In separate microwave-safe bowls, melt the white chocolate chips and candy melts in 30-second intervals, stirring between each interval until smooth
Drizzle the melted white chocolate and candy melts over the cooled cookies to create a bomb-pop-inspired design
Allow the drizzle to set before serving or storing the cookies in an airtight container
