A classic side dish that goes well with any event, creamy potato salad is great for picnics, barbecues, and other get-togethers. The dish tastes great and fills you up because it has a creamy dressing, soft potatoes, and crunchy vegetables.
Ingredients:
- 4 medium potatoes, boiled and cubed
- 1/2 cup mayonnaise
- 2 tablespoons sour cream
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1/4 cup chopped red onion
- 1/4 cup chopped celery
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
Instructions:
Put mayonnaise, sour cream, Dijon mustard, and apple cider vinegar in a large bowl and mix them together
Cut up some red onion, celery, parsley, and potatoes that have been boiled and cut into cubes
Mix well to cover everything
Add pepper and salt to taste
Put it in the fridge with the lid on for at least an hour before serving so the flavors can mix
If you want, add more parsley as a garnish before serving
