Ingredients:
- 8 oz beef sirloin, thinly sliced
- 8 oz lo mein noodles
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 tbsp ginger, minced
- 1/2 red bell pepper, thinly sliced
- 1/2 green bell pepper, thinly sliced
- 1/2 cup snow peas
- 1/4 cup carrots, julienned
- 2 green onions, chopped
- 1/4 cup low-sodium soy sauce
- 2 tbsp hoisin sauce
- 1 tbsp Szechuan chili paste
- 1 tsp sugar
- 1/2 tsp sesame oil
- 1/4 cup chicken broth
- Salt and pepper to taste
Instructions:
Cook the lo mein noodles according to package instructions, then drain and set aside
In a small bowl, mix together soy sauce, hoisin sauce, Szechuan chili paste, sugar, sesame oil, and chicken broth
Set aside
Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat
Add the sliced beef and stir-fry for 2-3 minutes until it's no longer pink
Remove from the skillet and set aside
In the same skillet, add the remaining 1 tablespoon of vegetable oil
Add garlic and ginger, and stir-fry for 30 seconds until fragrant
Add red bell pepper, green bell pepper, snow peas, and carrots
Stir-fry for 2-3 minutes until the vegetables are slightly tender but still crisp
Return the cooked beef to the skillet and pour the sauce mixture over everything
Add the cooked lo mein noodles and toss everything together to coat in the sauce and heat through
Stir in chopped green onions and season with salt and pepper to taste
Cook for an additional 2-3 minutes until everything is heated through and well combined
Serve hot, garnished with additional green onions if desired
